This is also a very dangerous thing…..dangerously addictive.
it’s the kind of cake that is worth getting forgetting new years resolutions for because….it’s that good.
This cake is not a fluffy and light cake…..it’s deliciously dense and lightly sweet with a deliciously light mollases flavour…so it goes well with generous scoops of vanilla ice cream and a cold glass of iced tea to chase it down with.
Like i said….This is a VERY good thing….now go make this…then we’ll talk.
GINGER MOLLASES CAKE
1 cup white all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons fresh grated ginger(see note)
1/4 cup blackstrap mollases
1/4 cup packed brown sugar( i used light brown)
1/4 cup packed strained yogurt or greek yogurt
1/4 cup unsalted butter
1 teaspoon vanilla extract
preheat the oven to 180. Butter and flour a 9 inch baking pan or line with parchment paper and set aside.
whisk together the butter,yogurt,egg,brown sugar,mollases,vanilla and ginger.Whisk well till it’s smooth and creamy.
In a medium sized bowl, combine the dry ingredients(flour,baking soda and salt).Now add the wet to dry and whisk very well to combine but don’t overmix! you don’t want a rock cake!
the batter will be very thick like tar(eww…bad reference?) but don’t worry.
Pour into the pan and bake for 15 to 20 minutes or till a toothpick inserted throught the center comes out clean
.Let cool in the pan, then cut out slices and serve with a generous scoop of vanilla ice cream.
NOTE: next time i would probably use more ginger or substitute powdered ginger for a stronger ginger flavour…if you do TRY that out let me know in the comments section.
Also, all my testers said that the cake would be really good with prunes or raisins soaked in red wine for a more “plum cake ” flavour…again,if you do try that out….leave it in the comments!
